I have a self-developed dynamic website with a 'users' table in its database. Can I Simply take one of the existing bridge files and modify it or is there more to it than that?

AFAIK the bridge files contain all required data. Unfortunately I cannot give your more details than written in the docs: http://documentation.coppermine-gallery.net/en/bridging.htm#integrating_bridge_file_creating_start
