does anyone know of a plugin or a script where it grabs random images from a folder from coppermine and embeds them onto a part on my website ?

There is, sort of. CPMFetch was designed to do just that but unfortunately we have not seen its developer (VUUD) around for a while. It was designed for CPG1.4.x but with a small change to the code it will work woth CPG1.5.x
