stuck on step 7

I' like to prepare my new website offline, using xampp. The coppermine installation stucks on step 7. The drop down field "MySQL Database Name" is empty and creating  of a new MySQL Database isn't possibel, see attached docs.

your server don't allow you to create a database via the install wizard. Try to creat first a database via phpmyadmin or an equvalent tool provided by your host (see your host for more informations about this)
after creating the databasen try to install coppermine...
read the doc to understand how coppermine works http://documentation.coppermine-gallery.net/en/requirements.htm#what_minimum_mysql

I've created the database already, but coppermine don't dedected it. I checked the docu befor installing cpg!

I assume you entered the wrong MySQL user data. As you said you're using XAMPP I cannot reproduce that behavior, as it's open as a barn door. Using user "root" with no password should list all available databases and also should allow you to create new ones directly from the installer.
