Did you search the board for "internal server error"?

Look, you probably looked at the wrong search results. An error named "500 internal server error" is exactly as the name suggests an uncaught, unhandled error that is unexpected. Something happened on the server (impossible to say what from looking at the error message) that made the script stop. The only way to figure out what is wrong is asking the server operator (your webhost usually) for support. It's in the server's error logs - the problem might be that the server operator won't give you the logs, or that you will not understand what they mean when you see them.
Bottom line: we can't help you - only your webhost can. And don't let them tell you that it's none of their business and that they don't support third party apps like coppermine: it all depends to ask your question in a smart way. Tell them that you got a 500 internal server error and ask them if they could take a look into the server's log for you and tell you what is wrong with the script.
