Errors on Date and Time

Since my site is a scrapbooking site we need the dates and times of uploads right as when we have a contest it asks them to upload by a certain time on a certain day.
Well for some reason I just noticed the last 3 uploads in the gallery say Aug.11th and they are one hour ahead of Eastern Time zone. So it said August 11 and 11 pm but its actually August 10 and it was at 10 pm

how can I fix this>

Enter the correct value in "Timezone difference relative to GMT (current time: Aug 11, 2008 at 05:54 AM)" while taking care of the daylight saving time.

my timezone is set right? It says GMT-05:00

I don't know where you live.
I live in Germany and have to set the timezone to +2 in the summer and to +1 in winter -> daylight saving time / standard time.
