Ho saputo che, tramite coppermine, è possibile taggare le foto che si inseriscono all'interno della galleria.
Io vorrei mettere una tag, in fondo all'immagine con scritto, per es. don't cut this tag/nome del sito.
E' possibile farlo?

Suppongo che quello che tu cerchi sia l'effetto filigrana o "watermark". Trovi svariate discussioni in merito, anche in questa sezione sul plugin CpgMark e sul modpack di Stramm.
