how can I use URL's or links in the category-descriptions-Fields?
I try to use html and bbcode ...

Post a link to your coppermine-driven gallery for a start. BBcode should work fine.

What Coppermine version do you have. You should upgrade to the most recent stable release (currently cpg1.4.9) if you don't already have it.
As I suggested: you can use bbcode, I have got no idea what's wrong for you nor why it doesn't work for you. Impossible to suggest anything else if I can't take a look for myself.
