I'm looking to create a site with a Coppermine gallery and private messaging but I don't want a forum, is this possible.  Can I install phpBB and disable the forum leaving PM'ing intact ?

you could, but this question is only theoretical and can be answered much better on the support forums of phpbb. I guess you'll have to be able to modify phpbb...

I have the script running but I don't see any forum. I wan tto be able to have instant messenging...coppermine has these features? where?

No, coppermine does not have these features.  They are on the bbs that coppermine can be bridged with.
