[Security] BACKUP function (or its manual substitute)

OK, so I need to have a BACKUP function in my gallery, or at least to know how to backup the db's manually. For example every week I make a backup in my phpbb forum, this is in case some hacker breaks in to the system and destroys the forum. I just installed coppermine a couple of days ago and I'm not launching it officially until I sort this "security question" out. I just want to have the chance to restore the db's and pics in case something goes wrong, with or without me knowing it.  ;D
