If I CHMOD or CHOWN the albums dir in coppermine so only the webserver has read/write access to this dir.. will the XP_Publish feature still work?

no!

If you want to be able to add pics, leave the CHMOD to 755 or 777 (depending on your server config).
If you're paranoid on security and you're the only one who is going to add pics to your gallery I recommend setting the albums folder to 555 (of course you'll have to switch to 755 before uploading and 555 after it again).

Hmm... If your permissions are set properly then read write perms for the webserver to albums should be enough for allowing you to upload photos via the web BUT that will prevent you from using FTP (unless you belong to the same group as the webserver - which is unlikely)
