So, here's the first.

How do I edit the Random Files and Latest Additions areas so that it only shows three images, and be able to correct the spelling for the header text?

Open the config and adjust The content of the main page (http://documentation.coppermine-gallery.net/en/configuration.htm#admin_album_list_content), i.e. change
