I am looking for a simple upgrade with a custom header and color changes to "fit" my site better. This is a "Glamour" photography site (non-adult) and I want a template that will "class" it up.

What you are asking for is actually quite a simple theme modification. To help people decide if they want or are able to take on this job you shoild do as suggested in the sticky on this board and post things like your budget and the timescale you would like this completed.

I would like the theme completed in the next 7-10 days and as you mentioned it would be a quite simple modification so I am looking to keep it under $100 but the quality of work that the coder can provide and samples of their past work will have a large bearing on the final price I am willing to pay. If none of the existing User-contributed themes (http://forum.coppermine-gallery.net/index.php/topic,42425.0.html) match your needs you might want to take a look at one of the existing website template sites like Templatemonster.com (http://www.templatemonster.com/) or Adult-Templates.com (http://www.adult-templates.com/) (Warning: link not safe for work), decide for one of the designs there and then pay a freelancer to actually create a coppermine theme out of the pre-made website template. This will get you much faster results, as the freelancer doesn't have to re-invent the wheel. Please note that I'm not affiliated with the template sites I mentioned in any way. I just linked them as an example.
