Hi, I'm wondering what template to customize to get rid of the dates displayed under thumbnails?

You are using stone age version of coppermine (1.3.2) !!!
First of all upgrade to most recent version 1.4.16 it's mandatory

Gee thanks.   The version I am using now works just fine for my client.   How hard is the upgrade?

Not hard, if you follow the upgrade steps as described in the docs.
