When I view my album list, I get:

Post a link. Looks like you might be running an outdated version of Coppermine.

Yea, it is an outdated version. I see many instances of this behavior on other Coppermine installations, but have not found a straight forward solution other than "upgrade and change your host".

...and the problem is not the random text, but the fact that I cannot upload anymore.

Upgrading is the only solution, outdated versions are no longer supported.

OK, so I pay my host $50 to export the current db... then what?
Who do you recommend for a new Coppermine host? Will they be able to import my existing db? How do I ensure that I don't hit a dead end again in a few years?

Read the upgrading section of the docs. Your best bet for the future is frequent backups and regular updates.
