how to update is being described in the coppermine docs- Nibbler already posted a link to the section you need to read.
Backing up coppermine is actually a two-step process: you back up the files on your webserver by downloading them to your client PC using your FTP app. Then you back up your mySQL database using a tool like phpMyAdmin (http://www.phpmyadmin.net/) or mySqlDumper (http://www.mysqldumper.de/en/index.php). Details can be found on the FAQ page as well. Please read before asking questions.
