This may have already been mentioned, but it would be awesome if there were an easy way to move photos from one album to another easily from a menu item.

There already is - explore edit album option

Do you mean by having the structure in your server updated when the pictures are moved too? Refer to my this (http://forum.coppermine-gallery.net/index.php?topic=939) thread.
