Which CHMOD after Upload

To insert pictures into the gallery after FTP-Upload I have to set CHMOD 777 for album folders.

Should I change the CHMOD for album folders afterwards or do I have to let it 777?

Is that no security problem?

The albums folder, and all folders in it, have to be writeable, otherwise coppermine cannot work.  So you must not change it.
