I would like to have a PHPBB forum setup with the attachment mod which allows them to imbed photos into their posts.  When users upload their photos with their posts, is there a way to have the photos copied into the user's coppermine gallery?

Unless you code that feature: no. At least we (Coppermine staff) are not aware of such a mod.
Bridging does not do that - it just ties coppermine's user management and authentification to the app coppermine is being bridged with. There's no interaction as far as attachments are concerned. What you're up to do would require editing the code of phpBB, which is something we're not familiar with. If such a mod should exist, you'd have to look for it on the phpbb resources, not here.
