I uploaded a new theme for the latest version of Coppermine and it screwed things up. Which file do i udit on my server to put back the previous theme?

you don't edit files, you just go back to your old theme by adding

theme=theme_name

in your browser's address bar.
Example: if your old theme's name was "mytheme", go to this address in your browser: http://mysite.tld/coppermine/index.php?theme=mytheme
If you have overwritten your old theme on the server (which isn't a good move), you'll have to replace the new files on the server by the old ones (hopefully on your hard drive).

Giving a link to your site might be helpfull as well...

You don't have to edit anything on your server,.
Just logon in admin mode, click on 'config' and change the theme there.
