I will be the only user, so there is no reason to have to click to open my galleries.

I would like to have them all displayed by default in the first row to all visitors to the site.

Secondly (stupid question perhaps, but) How do I change my username? I seem to be stuck with 'admin'.

If you are the only user then don't use 'user galleries' in the first place. Create regular albums and categories and they will be displayed on the main page.

You can rename your admin account by creating another account, making it admin and using that to change your name.
