Is it possible to have an album under a parent category but not show up on the index page?

only if you make it private and disable the display of private albums in coppermine config. If it is meant to be publicly accessible, but not to show up on the index page, you will have to modify the code, there's no switch for this in the user interface.

I see, I guess that won't work. I was trying to have a category thumbnail for the parent category with no thumbnail underneath of it, thanks for your help though.

You can do that by saying No to 'Show first level album thumbnails in categories'
