I have searched the heck out of this site looking for an answer to this one, so if there is one I need search lessons.

I would like to remove the e-card option from the gallery...... how?

You turn it off in the groups settings.  At the moment, although this will stop users from sending ecards, the icon will still be shown.

To remove the icon, edit your theme.php, find and remove this code;
